Mushroom & Ricotta Pizza

Ingredients

  • 50ml cream
  • 150g ricotta cheese
  • ½ cup finely grated parmesan, plus extra to serve
  • pinch of ground nutmeg (optional)
  • 2 cloves garlic, finely chopped
  • 5 portobello mushrooms, thinly sliced 
  • 8 sage leaves
  • 20g pine nuts, lightly toasted
  • sea salt
  • cracked pepper
  • large pre-made pizza dough
Got a few mates over for the game? This cheesy mushroom pizza is ready in less than 30 minutes. Serves 4.
  1. Preheat oven to 220ºC fan bake. 
  2. In a bowl, mix together ricotta, cream, ¼ cup of grated parmesan, ground nutmeg and garlic.
  3. Smear onto your pizza base and top with mushrooms, remaining parmesan, sage leaves and pine nuts.
  4. Season with sea salt and cracked pepper.
  5. Bake for 10 minutes or until the pizza base is golden and crisp.
