Grilled Sriracha Smash Burgers

Ingredients

  • 2 tablespoons Worchester sauce
  • 500g prime minced beef
  • 2-3 cups red and green cabbage, thinly sliced, dressed in mayonnaise and lemon juice to make a simple slaw
  • sriracha sauce, to taste
  • 1 cup store-bought mayonnaise
  • 6 cheese slices 
  • 6 brioche buns
Smash burgers are small burger patties you press down madly when grilling to make them super thin. Yum in a brioche bun, paired with an icy-cold brew. Serves 6.
  1. Pour the Worchester sauce over the beef, season well with about a teaspoon each of salt and pepper (it takes more than you might think) and combine.
  2. Take 1/3 cup measures of the meat (using a springform ice cream scoop makes it easier) and roll them into balls before putting them on a plate to rest. 
  3. Season the slaw and refrigerate until serving time.
  4. Put the mayonnaise in a small bowl, add 1-2 tablespoons of sriracha, and stir and taste. Add more if you like things a bit spicy.
  5. Heat a cast iron (or non-stick pan) to super-hot. Add 2-3 beef balls and smoosh them as flat as possible with a spatula. Flip them to cook on the other side and lay a piece of cheese on top. When the cheese melts, they are ready. 
  6. To serve, layer 3 cooked patties together, slap them in a warmed brioche bun, drizzle with sriracha mayo, add onion rings and slaw if you like or have it on the side and eat immediately.
