Tickled Pink Margarita

Ingredients

  • 1 kaffir lime leaf
  • 1 teaspoon pink peppercorns
  • 60ml tequila
  • juice of half a lime
  • ½ cup pink grapefruit juice
  • soda water, to top
  • pink peppercorn and salt rim, to garnish (see below)
  • ice

This easy tequila cocktail is deliciously fragrant and refreshing with some nice surprises on the palate from kaffir lime leaf and pink peppercorn

  1. To make a pink peppercorn and salt rim: Use a pestle and mortar to crush a small handful of pink peppercorns, add a teaspoon or 2 of salt and muddle together. Squeeze citrus juice onto a plate and salt-and-pepper mix on another. Dip the rim in the lime juice and then the salt-and-pepper mix to coat evenly
  2. Muddle the lime leaf and pink peppercorns together in a cocktail shaker. Add ice, tequila and lime juice and shake vigorously. Strain into a glass and add pink grapefruit juice. Top with soda water and stir gently
