Passionfruit Mojito


  • 120ml white rum
  • 60ml Aperol
  • 2 teaspoons caster sugar
  • soda water
  • 2 passionfruit

The perfect drink for a hot summer's day

  1. Fill a cocktail shaker with ice, and add rum, Aperol and sugar. Shake well
  2. Fill two rocks glasses with ice, add liquor mixture
  3. Top with soda water, then scoop the flesh of half a passionfruit out and drizzle on top
  4. Garnish with a sprig of Vietnamese mint
