  • For the coffee cubes:
  • 4 tablespoons instant coffee
  • 1 cup warm water
  • For the cocktail:
  • 90ml whiskey
  • 90ml Baileys
  • ¼ cup milk

Put an Irish coffee on ice this St Patrick's Day, with this canny cocktail made by pouring Baileys and Irish whiskey over coffee ice cubes. Serves 2

  1. Make coffee ice cubes by whisking together instant coffee and water in a small jug, then pour into 4 large or 8 small ice cube moulds. Freeze for 6-10 hours or until frozen solid
  2. In a small jug, place whiskey, Baileys and milk and stir with a fork to combine
  3. Place ice cubes into two short glasses and pour whiskey and Baileys mixture over the top
