
Ingredients

½ cup chopped watermelon

small nub peeled fresh ginger, grated

50ml tequila

30ml lime
-
30ml Cointreau
-
crystallised ginger and small wedge of watermelon, to garnish (optional)

SALT RIM

lime juice

Watermelon and ginger play very nicely together in this cooling margarita with added bite. Serves 1

Salt rim: Squeeze lime juice onto a small plate and pour salt on to another, dip rim in lime then salt to coat the rim evenly.

Blitz watermelon and ginger in a blender and fine strain into a cocktail shaker, pushing on the solids to extract juice. Discard solids. Add ice to shaker along with tequila, lime, Cointreau and shake well. Strain into salt-rimmed margarita glasses. Garnish with a piece of crystallised ginger and a small wedge of watermelon skewered on a cocktail stick.
