BBQ Salmon with Coconut, Lime & Chilli Drizzle


  • 6 portions of fresh salmon, skin on
  • 1 tablespoon barbecue rub or all-purpose seasoning
  • olive oil
  • ½ cup coconut cream
  • ¼ cup mayonnaise
  • juice and zest of 1 juicy lime
  • 1 spring onion, finely diced
  • 1 chilli, finely sliced
  • fresh coriander, chopped

Enjoy mouthwatering salmon that's perfect for the season. Serves 6.

  1. Sear the salmon portions on the BBQ skin-side-down, then flip and continue cooking until just turning pale pink up the sides or to your liking.
  2. Combine all coconut, lime & chilli drizzle ingredients in a jar and shake together well, then season to taste.
  3. Serve salmon with cracked pepper and drizzle over the Coconut, Lime & Chilli Drizzle.
