Barbecue Halloumi and Vege Skewers

Ingredients

  • 200 grams halloumi
  • 1 zucchini
  • 2 red, yellow or orange capsicums
  • 1 small red onion
  • 2 tablespoons olive oil
  • 1 clove garlic, crushed
  • 1 tablespoon sesame seeds
  • pinch smoked paprika
  • 2 tablespoons tamari seasoning or sweet soy
  • bamboo or metal skewers
A great vegetarian option for a BBQ, halloumi is a crowd favourite and gets a lovely golden crunch when grilled
  1. Dice the halloumi and vegetables into bite-sized pieces and toss with the combined oil, garlic, sesame seeds and paprika. Thread halloumi and vegetables onto pre-soaked bamboo or metal skewers, alternating the colours.
  2. Pre-heat the grill and cook skewers for 2-3 minutes each side until tender and the vegetables are coloured.
  3. Arrange on a serving platter and drizzle with tamari or sweet soy.
  4. Serves 4


    Tip: Use chorizo or prawns instead of halloumi
