Mint Julep Popsicles

Ingredients

  • 2 ½ cups water
  • 1 cup demerara sugar (or raw sugar)
  • ½ cup mint leaves
  • 40ml bourbon
  • ice block moulds
Now these are fun! Turn a simple cocktail into something spectacular by pouring into ice moulds and freezing overnight. While it's tempting to add more bourbon to the recipe, the alcohol-to-water ratio needs to be just right so that the ice blocks still set – so stick to our guide. Makes about 4-6 popsicles.

This cocktail is inspired by Resene Mint Julep paint colour, and is also the beautiful hue seen in the background of the cocktail photograph. 

  1. In a saucepan over low heat, add water, demerara sugar and mint leaves.
  2. Simmer for 10 minutes until sugar is dissolved.
  3. Strain liquid into a bowl and let cool.
  4. Add bourbon to the cooled sugar liquid then pour into ice block moulds.
  5. Freeze overnight and enjoy the next day!
