Ara Single Estate Rose 750ml, RRP $17.99

  1. Pour cold water, up to 5cm, into a large plastic bowl. Add a generous sprinkling of fresh herbs (stems and leaves intact) and edible flowers. Freeze until set.
  2. Remove from the freezer and place a smaller bowl on top of the frozen base. Weigh down with a heavy dish (a pestle and mortar bowl is ideal).
  3. Slice strawberries (or your fruit of choice) and slot them down the sides between the two bowls. On top of the strawberries add more herbs, fresh raspberries and edible flowers. Carefully pour water down the sides to fill to the top. Freeze overnight.
  4. Sprinkle salt onto a serving plate. Remove bowl from the freezer and run under warm water to separate the two bowls. Place the frozen chiller on the salted plate. Pop in your favourite summer wine - and enjoy!
  5. Tip: Use any fruits, flowers and herbs you like – just make sure they’re all edible!
