Classic Piña Colada

Ingredients

  • 2 fresh pineapples, scooped out (see Instructions)
  • 45 mls white rum
  • 30 mls dark rum
  • 100mls pineapple juice
  • 60ml coconut cream
  • Ice, orange quarters, maraschino cherries, to serve

Sorry if you've got the song in your head...but so have we. This is so much fun to make, especially if you're making it with a friend! 

  1. To scoop your pineapples, cut the top off using a sharp knife, about 5cm below the leaves. Run your knife in a circle around the flesh, about 1/2cm away from the edges.
  2. Once you've cut all the way around, cut the inside core (the bit you want to take out) into quarters, so you have 4 big pieces. Remove with a large spoon, and scrape out the last of the fruit into a blender.
  3. Remove the hard middle part of the pineapple from your four quarters, then roughly chop the sweet flesh into cubes and add to the blender.
  4. Add both rums, pineapple juice and coconut cream to the blender. Holding the lid on firmly, blitz until smooth.
  5. Place ice into your scooped pineapples, then pour in the piña colada liquid. To garnish, thread oranges and cherries onto cocktail sticks and skewer through the edge of the pineapple. Serve with paper straws and cute umbrellas!
