Blackberry Vanilla Gin Float


  • 1 cup frozen or fresh blackberries, plus extra, to serve
  • 6 tablespoons blackberry jam syrup (make as a 2:1 blackberry jam:water ratio)
  • 6 scoops vanilla ice cream
  • 60ml gin
  • soda water, to top up
Smooth vanilla ice cream with a hint of fruit and juniper makes this dessert a serious contender. Serves 2.

This cocktail is inspired by Resene Blackberry paint colour, and is also the beautiful hue seen on the wall of the cocktail photograph. 

  1. Into each serving glass, add a few handfuls of blackberries, 3 tablespoons of blackberry jam syrup, and 3 scoops of vanilla ice cream.
  2. Pour 30ml of gin into each glass (over the top of ice cream), then top glasses with soda water.
  3. Stir gently before drinking to disperse the flavours.
