• 200ml gin
  • 100ml rhubarb cordial or puree (we used Barkers)
  • 100ml peppermint tea
  • 100ml boiling water
  • rhubarb batons (you can find Fresh As freeze-dried ones in food stores if not in season), to garnish
  • fresh mint, to garnish

This gin and fruit toddy is super easy to make, and great for sharing with a crowd

  1. Add all liquid ingredients to a glass punch bowl, making sure to add the boiling water last. Serve steaming hot with rhubarb batons and mint sprigs to garnish.
