Summer Salad Jars

Ingredients

  • ¼ red cabbage, finely shredded
  • ¼ green cabbage, finely shredded
  • 1 large carrot, peeled and grated
  • 2 handfuls baby spinach or kale leaves
  • 1 tin sweetcorn kernels, drained
  • 2 roasted red peppers, sliced
  • 100 grams feta, crumbled
  • 1 tablespoon pumpkin seeds
  • your favourite dressing
Delicious, fresh and nutrition-packed, these jars are a portable, picnic-ready solution.
  1. Prepare all the vegetables and arrange in colourful layers in your serving jars.
  2. Crumble over the feta cheese and sprinkle with pumpkin seeds or nuts.
  3. Drizzle over your favourite dressing up to half an hour before eating.
  4. Makes 4 medium jars
    Tip: You can also layer these jars with cooked meats such as diced roast chicken, pastrami or ham.
