BBQ Chicken Drums with Chipotle & Dill Pickle Mayo

Ingredients

  • BBQ CHICKEN DRUMS:
  • 8-10 chicken drumsticks
  • 2 cloves garlic, crushed
  • 2.5cm piece fresh ginger, grated
  • ¼ cup light soy
  • 2 tablespoons sweet chilli sauce
  • CHIPOTLE & DILL PICKLE MAYO:
  • 1 cup mayonnaise
  • 3-4 tablespoons chipotle sauce
  • 2-3 dill pickles, finely diced
  • Dash of Worcestershire sauce
  • 1 tablespoon tomato sauce

Serves:4

  1. Combine the garlic, ginger, soy and sweet chilli sauce to make a marinade.
  2. Toss the drumsticks in the marinade and marinate for at least 2 hours.
  3. Pre-cook in the oven for 20 minutes at 180°C, then finish on the barbecue grill, or cook on a barbecue with a hood for 15-20 minutes until thoroughly cooked through.
  4. Mix all chipotle and dill pickle mayo ingredients together and season to taste.
  5. Serve drums with the chipotle & dill pickle mayo.
