Which is why Silver Fern Farms has developed a range of tasty new culinary recipes to take consumers on a taste adventure around the world from the comfort of their own home, including a Cuban Style Beef Flat Iron Steak Sandwich, Vietnamese Venison Salad and these incredible Mexican Lamb Steak Tacos with Slaw, below…
Mexican Lamb Steak Tacos with Slaw
Preparation time: 20 minutes
Cooking time: 10 minutes
1 pack Silver Fern Farms Lamb Steaks
2 Tbsp Olivado extra virgin olive oil
150g red cabbage, sliced thinly
1 green onion, trimmed and sliced
½ capsicum, seeds removed thinly sliced
3 limes, 2 juiced and 1 to serve
½ tsp hot sauce/tabasco
Pinch of chipotle powder
2 Tbsp coriander
1 Tbsp mayonnaise
1 Tbsp Greek yoghurt
6 small tortillas
Green chilli and coriander to serve
Remove Silver Fern Farms Lamb Steaks from packaging and set aside to bloom before cooking (meat “blooming” happens when meat is exposed to air and turns red). Rub the lamb with olive oil, salt and freshly cracked pepper.
Combine the red cabbage, green onions and capsicum.
Dress with remaining olive oil and juice of 1 lime.
Season with salt.
Make whipped avocado by blending avocado, hot sauce, chipotle powder, coriander, mayonnaise, Greek yoghurt and juice of one lime until smooth.
Quick to cook:
Heat a skillet or BBQ plate until moderate/medium – hot.
Cook the lamb steaks for 4 mins each side for medium rare.
Remove lamb from heat and cover with foil. Leave to rest for 8 mins before slicing. Meanwhile heat the tortillas on the grill or in the oven.
Savour and enjoy:
Fill warmed tortillas with slaw, slices of steak topped with whipped avocado and garnish with coriander and green chilli, and serve with lime wedges.
These Lamb Steak Tacos are a perfect match with an aromatic wine like the Saint Clair Origin Gruner Vetliner or alternatively a classic Corona with lime.
