WHISKY HOT TODDY: put the honey in a small jug with the boiling water and stir to dissolve the honey. Leave to sit for a minute. Put the lemon quarter in a glass and gently press to release some of the juice. Add a few slices of ginger and the whisky, then top with honeyed water and stir to combine. Serve immediately.
WHISKY HIGHBALL: simply combine whisky and ginger beer or ginger ale in a tall glass, over ice. Add a few slices of lemon to serve. Each recipe serves 1.
