Strawberry and Rhubarb Bellini


  • ⅓ cup sugar
  • ⅓ cup water
  • ½ cup rhubarb stalks, chopped
  • ½ cup strawberries, hulled and sliced
  • 1 bottle Prosecco

The wonderful thing about a Bellini is not only does it taste fruity and offer a pop of colour along with refreshing bubbles, its also very easy to prepare

  1. Combine sugar and water and heat, stirring, until sugar is dissolved
  2. Add rhubarb and simmer, stirring, for 10 minutes. Add strawberries and simmer for 10 minutes more
  3. Take off heat and let cool, then blend until smooth, and chill
  4. To serve, put 2 teaspoons of puree into a flute glass and top with chilled Prosecco. Stir carefully and serve
