Strawberry and Rhubarb Bellini

Ingredients

  • cup sugar
  • cup water
  • cup rhubarb stalks, chopped
  • cup strawberries, hulled and sliced
  • 1 bottle Prosecco
  1. Combine sugar and water and heat, stirring, until sugar is dissolved
  2. Add rhubarb and simmer, stirring, for 10 minutes. Add strawberries and simmer for 10 minutes more
  3. Take off heat and let cool, then blend until smooth, and chill
  4. To serve, put 2 teaspoons of puree into a flute glass and top with chilled Prosecco. Stir carefully and serve
