• 30ml white rum
  • 60ml spiced coconut water
  • 1/3 cup pineapple juice
  • Juice of 1 lime (to taste)
  • 15ml coconut rum
  • soda, to top
  • ice
  • pineapple wedge and star anise, to garnish
  • 1 cup cup coconut water
  • ¼ cup sugar
  • 2 star anise
  • 1 cinnamon stick
  • 2 cloves
  • 10 black peppercorns

This twist on a Pina Colada uses coconut water and spices to winter-fy a classic. Serves 1

  1. Spiced coconut water: Heat coconut water with the spices until bubbling. Leave to simmer for 10 minutes, then cool and strain. (Will last refrigerated for up to 1 week.)
  2. For the cocktail: Add all ingredients, except soda, to an ice-filled cocktail shaker and shake well. Pour into a tall glass filled with ice. Garnish with a pineapple wedge and star anise.
