¼ cup cinnamon sugar (made up of ¼ cup caster sugar + 1 teaspoon cinnamon powder)
winter fruits (pears, apples, plums), sliced
icing sugar, to serve
Makes 8 tartlets.
Pre-heat the oven to 200 degrees celsius.
Cut two sheets of the pastry into 4 squares each. Do the same with the remaining two sheets, but then cut a smaller square out the middle of each to create a frame of pastry.
Brush the original 8 squares of pastry with the beaten egg, then overlay them with the pastry frames and gently seal the edges around the outside with fingertips or a fork.
Arrange sliced fruit of your choice in the centre of each pastry frame, and sprinkle with cinnamon sugar.
Bake for about 15-20 minutes until the pastry is golden and the fruit soft and syrupy.
