  • 1 dash orange bitters
  • 30mL Beefeater Gin
  • 15mL lychee liqueur
  • Perrier-Jouët Champagne
  • dehydrated or fresh orange peel to garnish
  • ice

This delicious Chinese-inspired champagne cocktail combines gin and bubbles with the flavours of lychee and orange. Recipe by SKYCITY’s Huami. Serves 1

  1. Chill a mixing or shaker glass, then add the orange bitters and rinse it around the inside of the glass, throwing out any excess
  2. Add ice to the mixing glass, then add the gin, lychee liqueur and stir down until chilled
  3. Strain into chilled coupe glass (like that pictured) and top with Perrier-Jouët Champagne
  4. Float dehydrated orange peel on top, or substitute with fresh orange peel. If using fresh peel, the oils can overpower this delicate cocktail so either rub the rim of the glass then discard, or blanch peel first, then float
