Sparkling Berry Jellies

Ingredients

  • 3 cups rosé bubbles
  • tablespoon gelatin powder
  • 1 cup caster sugar
  • a few pieces of lemon and orange peel
  • 250g strawberries, de-stalked and chopped to suit
  • 125g raspberries, de-stalked (or other summer berries)

These berry jellies are probably the prettiest way to use leftover bubbles that we know (and they're super delicious too!). Serves 4

  1. Place 1 cup of the rosé bubbles in a jug and sprinkle the gelatin on top (don't stir). Leave to sit for 10 minutes
  2. In a saucepan, heat the remaining 2 cups of ros until simmering and add sugar and citrus peel. Stir at a fast simmer until the sugar crystals have dissolved (about 5 minutes). Take off heat and set aside to cool. Once partially cooled, remove the citrus peel and add the wine and gelatin mixture, stirring well to combine
  3. Pour the ros mix evenly between four serving glasses, and add the berries. The berries will float to the top if you would like some to sink, wait until the jelly starts to set (about 90 minutes) and gently push them down with a skewer. Cover each glass with clingfilm and refrigerate for at least 6 hours to set. Serve slightly chilled
  4. Serve With edible flowers (optional).
