Rhubarb Brandy Sour


  • 1 cup rhubarb, roughly chopped
  • ½ cup sugar
  • 1 cup water
  • zest of 1 lemon
  • 90ml St Remy brandy
  • juice of two lemons
  • 4 tablespoons rhubarb syrup
  • soda water
  • ice

Rhubarb season is upon us and this sour cocktail, with just enough sweetness, is a delicious way to celebrate these tasty vegetables! Serves 2

  1. To make the rhubarb syrup, add all syrup ingredients to a medium saucepan and bring to a gentle simmer.
  2. Simmer for 10 minutes, stirring occasionally. The mixture should become soft and syrupy. Remove from heat and leave to cool.
  3. Add brandy, lemon juice and rhubarb syrup to an ice-filled cocktail shaker. Shake well for 30 seconds.
  4. Pour evenly between two ice-filled short glasses and top with soda.
