Rhubarb and Apple Sour

Ingredients

  • For the rhubarb syrup:
  • 1 cup rhubarb, roughly chopped
  • cup sugar
  • 1 cup water
  • zest of one lemon
  • For the cocktail:
  • cup apple juice
  • juice of one lemon
  • 45ml gin
  • 1 tablespoon rhubarb syrup
  • soda
  • ice
  • thyme and extra ice (we put rhubarb in ours), to garnish

This seasonal spring tipple is almost too pretty to drink. But not really. Serves one

  1. To make the rhubarb syrup, add all syrup ingredients to a medium sized saucepan and bring to a gentle simmer. Simmer for 8-10 mins, stirring occasionally. The mixture should become soft and syrupy. Remove from heat and leave to cool.
  2. Add apple juice, lemon juice and gin to an ice-filled cocktail shaker
  3. Shake vigorously for one minute
  4. Spoon the rhubarb syrup to a glass and top with ice
  5. Strain gin mixture into glass and top with soda
  6. Enjoy!
