Rushing Raspberries

Ingredients

  • 15ml sugar syrup
  • 5 mint leaves
  • 60ml soda water
  • fresh ginger, a few 'matchstick' slices, to garnish
  • 45ml Bacardi Carta Blanca Rum
  • 25ml lime juice
  • 5-6 raspberries (fresh or frozen)
So refreshing and zesty, you'll wonder why you didn't discover it earlier. Serves 1
  1. Pre-chill a highball glass in a freezer for 10 minutes.
  2. Add raspberries to glass and muddle to release the juice.
  3. Add Bacardi Carta Blanca Rum, lime juice and sugar syrup.
  4. Fill glass with ice and top with soda water. Gently stir to combine.
  5. Garnish with mint and ginger.
