 Piña Colada Ice Cream Float

Ingredients

  • 200ml white rum
  • 400ml pineapple juice
  • 8 scoops of coconut-based ice cream
  • 200ml sparkling coconut water
  • 2 tablespoons coconut threads, toasted
  • fresh pineapple slices and lime wedges, to serve
Dessert or a drink? Either way this rum and coconut ice cream number is a winner. Tropical island optional. Serves 4.
  1. In a jug, mix together white rum and pineapple juice. Pour evenly between 4 glasses.
  2. Add 2 scoops of coconut ice cream to each glass. Fill up each glass with sparkling coconut water.
  3. Top each of the floats with toasted coconut, a wedge of pineapple and a squeeze of lime juice.
