Ingredients

200ml white rum

400ml pineapple juice

8 scoops of coconut-based ice cream

200ml sparkling coconut water

2 tablespoons coconut threads, toasted

fresh pineapple slices and lime wedges, to serve
Dessert or a drink? Either way this rum and coconut ice cream number is a winner. Tropical island optional. Serves 4.

In a jug, mix together white rum and pineapple juice. Pour evenly between 4 glasses.

Add 2 scoops of coconut ice cream to each glass. Fill up each glass with sparkling coconut water.

Top each of the floats with toasted coconut, a wedge of pineapple and a squeeze of lime juice.
