Lychee Long Iced Tea


  • 120ml vodka
  • 60ml simple syrup
  • 60ml iced tea (we used Sipper Black Peach)
  • 100ml lychee juice (we used tinned lychees)
  • fresh mint and tinned or freeze-dried lychees, to serve
As refreshing as it sounds, this vodka, lychee and peach combination is summer perfection in a glass.

For a sparkling version, halve the lychee juice and top drink with tonic water. Serves 2.

  1. In a cocktail shaker, mix vodka, simple syrup and the lychee juice with plenty of ice.
  2. Shake well, then strain and pour into tall glasses.
  3. Garnish with mint and a tinned or crushed freeze-dried lychee.
