Beet to the Punch

Ingredients

  • 1 cup beetroot juice (see below)
  • juice of 2-3 lemons
  • 2 tablespoons mānuka honey
  • ½ bottle prosecco
  • ½ cup Aperol
  • ¼ cup vodka
  • ice cubes
  • thinly sliced beetroot, to garnish, if desired
  • BEETROOT JUICE
  • ¾ cup of water
  • 4 beetroot, grated
Drink one of your five-plus a day with this earthy and interesting punch made using beet juice. Serves 4
  1. BEETROOT JUICE: Add the water and grated beetroot to a bowl and mix well. Pour off the loose liquid, then put the gratings in a clean tea towel (beware: it will likely stain) or cheese cloth and squeeze as much juice out as you can. Keep gratings for another use.
  2. FOR THE COCKTAIL: Add all ingredients to a jug and mix well. Pour into ice-filled glasses. We garnished ours with a mandolin-sliced round of beetroot.
