Apple Mojito

Ingredients

  • For the apple cider syrup:
  • 500ml Mac's Cloudy Apple Cider
  • 1 cup brown sugar
  • 2 apples, cored and cut into chunks
  • small handful torn mint leaves
  • For the drink:
  • 2 tablespoons freshly squeezed lime juice
  • 90ml Bacardi Carta Blanca Rum
  • 60ml apple cider syrup
  • soda water
  • apple slice and mint sprig, to garnish

The word mouthwatering could have been invented for this incredible mojito recipe with flavours of apple, mint and lime. Serves 2

  1. To make the apple cider syrup, heat the apple cider, brown sugar and chopped apple in a saucepan and simmer for 10 minutes. Strain out the apple chunks and add chopped mint leaves to the liquid and leave to steep for 10 minutes. Strain out mint, then leave to cool. Keep leftover syrup in the fridge for up to a week.
  2. Add lime juice, rum and apple cider syrup to a cocktail shaker filled with ice.
  3. Shake and strain into a short glass filled with ice. Top with soda water and garnish with a sprig of mint and a slice of apple.
