Raspberry Gin and Lemonade Cooler

Ingredients

  • For the pink ice cubes:
  • 1 cup fresh or frozen raspberries
  • 1 cup water
  • For the cooler:
  • juice of 3 lemons
  • 120ml limoncello
  • 180ml Bombay Sapphire Gin
  • 500ml Mac's Lemon Crush or old fashioned lemonade
  • Nakd Sparkling Water
  • lemon slices, to garnish
Simple and delicious, this gorgeous cocktail will soar to the top of your to-drink list this summer. Serves 46
  1. To make the pink ice cubes, muddle the raspberries together with the water and then strain through a sieve. Use the liquid to make large ice cubes
  2. Add the pink cubes to a tall jug. Pour in lemon juice, limoncello and gin
  3. Add the Mac's Lemon Crush or old fashioned lemonade, then top with soda
  4. Garnish with lemon slices
