Pineapple Lump Martini

Ingredients

  • For the cocoa sugar rim:
  • 2 tablespoons good quality cocoa
  • 2 tablespoons sugar
  • For the cocktail:
  • 90ml Lewis Road Creamery Chocolate Liqueur
  • 45ml Malibu Pineapple
  • 1/4 cup milk
  • 4 tablespoons pineapple juice

Get Kiwiana with this chocolate and pineapple cocktail based on Pineapple Lumps lollies. Serves 2

  1. To make the sugar rim, mix together cocoa and sugar in a small bowl. Run a wedge of lemon or lime around the rim of each glass and dip into the bowl
  2. Place cocktail ingredients into an ice-filled cocktail shaker and shake for 30 seconds. Strain into martini glasses and garnish with a small piece of pineapple, if desired
