Ingredients

1 pineapple, reserving some for garnish (optional)

sprinkle of sugar, optional

2 handfuls mint leaves, plus extra sprigs for garnish (optional)

1 cup water

juice of 1 lime

120ml Tanqueray Rangpur Gin
An icy glassful of minty pineapple refreshment is given some extra punch with the flavourful addition of Tanqueray’s Rangpur lime gin. Serves 4

Peel, core and chop pineapple and sprinkle over sugar if the pineapple needs added sweetness, leave for half an hour to macerate if adding sugar

Add all ingredients to a blender and blitz until smooth

Strain through a sieve into a jug. Then pour into glasses filled with crushed ice

Garnish with a pineapple wedge and sprig of mint, if desired
