Pineapple Gin Agua Fresca

Ingredients

  • 1 pineapple, reserving some for garnish (optional)
  • sprinkle of sugar, optional
  • 2 handfuls mint leaves, plus extra sprigs for garnish (optional)
  • 1 cup water
  • juice of 1 lime
  • 120ml Tanqueray Rangpur Gin
An icy glassful of minty pineapple refreshment is given some extra punch with the flavourful addition of Tanqueray’s Rangpur lime gin. Serves 4
  1. Peel, core and chop pineapple and sprinkle over sugar if the pineapple needs added sweetness, leave for half an hour to macerate if adding sugar
  2. Add all ingredients to a blender and blitz until smooth
  3. Strain through a sieve into a jug. Then pour into glasses filled with crushed ice
  4. Garnish with a pineapple wedge and sprig of mint, if desired
