Lemongrass and Lime Martini

Ingredients

  • 45ml vodka
  • 30ml lemongrass and kaffir lime syrup (see method)
  • 15ml dry vermouth
  • ice
  • lemongrass spear and kaffir lime leaf, to garnish
  • LEMONGRASS AND KAFFIR LIME SIMPLE SYRUP
  • 1 lemongrass spear
  • 1 double kaffir lime leaf
  • Juice of lime
  • 1 cup water
  • cup sugar
Add an aromatic zing to your martini repertoire. Serves 1
  1. Lemongrass and kaffir lime simple syrup: Bruise the lemongrass with a mortar to release its flavour. Add to a pot with the lime leaf, lime juice, sugar and water and heat gently until sugar is dissolved, then simmer for 10 minutes on a low heat. Leave to cool. Strain liquid. (Will last refrigerated for up to a week.)
  2. For the cocktail: Add vodka, lemongrass syrup and vermouth to an ice-filled cocktail shaker. Shake well. Strain into a chilled martini glass and garnish with a lime leaf and a lemongrass spear.
