Lavender Spritz


  • 30ml gin
  • 15-30ml lavender syrup (to taste)
  • 15ml lemon juice
  • champagne/sparkling wine/prosecco to top
  • lavender flower, to garnish
  • 10 lavender flowers
  • 1 cup water
  • ½ cup sugar
  • 6 frozen blueberries

Pretty as a picture, this violet, fragrant sipper is delicately perfumed and beautifully balanced with bubbles. Serves 1

  1. Lavender simple syrup: Place all ingredients into a small pot and heat gently until sugar has dissolved. Simmer gently for 10 minutes. Leave to cool. Strain liquid. (Will last refrigerated for up to a week).
  2. For the cocktail: Add gin, lavender simple syrup and lemon juice to an ice-filled cocktail maker and shake well. Place a lavender flower into a champagne flute, pour in lavender syrup and top with bubbles.
