  • juice of 4 lemons or limes
  • 1 mild chilli, thinly sliced
  • 1/4 cup juice from tinned lychees
  • 4 tinned lychees
  • 4 sprigs mint or basil
  • ginger beer
  • ice

Perfect for celebrating Chinese New Year, this super flavoursome cocktail with whisky, chilli, lychee and ginger beer is one for enjoying all year round. Serves 2

  1. Place whisky, lemon juice, chilli and lychee juice in an ice-filled cocktail shaker
  2. Shake for 30 seconds, then strain into two ice-filled tall glasses. Place a whole lychee and a sprig of mint in each glass, then top with ginger beer
