Grilled Pineapple with Brown Sugar Rum Glaze

Ingredients

  • 2 tablespoons rum
  • 2 tablespoons brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon olive oil
  • 1 pineapple, cut into 1-2cm thick rounds then cut in half or quarters
  • TO SERVE
  • 1/3 cup coconut yoghurt
  • zest of 1 lime, plus lime wedges
Kiwi summers are all about refreshing drinks and barbecues. Combine the two by grilling with spirits and discover fresh new flavours
  1. In a small bowl, combine the rum, brown sugar and vanilla extract.
  2. Brush the barbecue grill plate with the oil. Cook the pineapple on the grill for 2-3 minutes on each side, or until golden. Brush with the rum sauce and cook for a further minute on each side.
  3. Serve with coconut yoghurt, lime zest and lime wedges.
