Grapefruit and Fennel V&T

Ingredients

  • ¼ of a small fennel bulb, roughly chopped, fronds reserved for garnish (optional)
  • juice of a grapefruit, wedge reserved for garnish (optional)
  • 1 tsp pink peppercorns
  • 50ml Grapefruit Absolut Vodka
  • Fevertree Mediterranean Tonic, to top
Juicy grapefruit, a touch of aniseed flavour and the nuance of pink peppercorns make Absolut’s delicious grapefruit vodka absolutely sing. Serves 1
  1. Crush the pink peppercorns in a mortar and pestle. Add to a cocktail shaker with chopped fennel bulb and muddle well
  2. Add ice, grapefruit juice and vodka and shake well
  3. Strain into an ice-filled glass and top with tonic of your choice, we used Fevertree Mediterranean Tonic
  4. Garnish with fennel fronds and a wedge of grapefruit
