• 1 rockmelon
  • 2 tablespoons ginger marmalade
  • 150ml gin
  • 50ml lime juice
  • 300ml ginger beer
  • crystallised ginger and rockmelon to garnish (optional)

This granita made with ginger marmalade, gin and rockmelon is perfect for summer entertaining. Serves 4-6

  1. Cut rockmelon, discard seeds and cut away skin. Puree the flesh in a blender with the ginger marmalade, gin and the lime juice
  2. Pour into a large container, add the ginger beer and stir. Cover and freeze, periodically scraping with a fork as it starts to freeze
  3. Serve in a glass or bowl with a spoon, garnished with the ginger and melon if using
