Cucumber and Ginger Mojito


  • 10cm chunk of cucumber, plus slices to garnish
  • small handful of mint leaves, plus sprigs to garnish
  • 1-2 teaspoons sugar
  • fresh ginger
  • juice of half a lime, plus wedges to garnish
  • 60ml white rum
  • soda water, to top
  • ice

The perfect accompaniment to barbecue season, this classic mojito with mint, sugar and fresh lime is made extra refreshing with the addition of cucumber, with a nice kick of warming ginger. This could be your go-to cocktail for summer. Serves 1

  1. Muddle the cucumber, mint and sugar in the bottom of a cocktail shaker. Half fill the shaker with ice
  2. Peel a good thumb-sized knob of ginger and grate. Squeeze the juices of the grated ginger into the cocktail shaker. Add the lime juice and rum and shake well
  3. Fill a tall glass with crushed ice, sprigs of mint, cucumber slices and lime wedges and then strain in the rum mixture. Top with soda water and gently stir to mix
