Thai Style Beef Salad

Ingredients

  • 400g eye fillet or sirloin beef
  • 15ml olive oil
  • 2 tablespoons teriyaki sauce
  • 200g glass noodles
  • 1 cup baby minted peas
  • 1/2 cucumber, sliced, seeds removed
  • Large handful beansprouts
  • 1/2 red onion, finely sliced
  • 1 red chilli, sliced
  • Handful each fresh mint and coriander leaves
  • 1/2 cup roasted salted peanuts, chopped
  • FOR THE DRESSING
  • 2 tablespoons each sesame oil, plain oil, fish sauce
  • 1 tablespoon palm or coconut sugar
  • 1/4 cup lemon or lime juice
An amazing throw-together lunch or dinner that's not too tricky to make, but tasty and quick. Serves 3-4
  1. Season the steaks and sear in a hot pan for 3-4 minutes each side, or until cooked to your liking. Rest for 10 minutes before slicing and tossing in the teriyaki sauce.
  2. Meanwhile, simmer the glass noodles in plenty of boiling water for 4-5 minutes, then rinse and drain well.
  3. Combine the dressing ingredients in a jar and shake well.
  4. When ready to serve, toss the noodles with the peas, cucumber and beansprouts and drizzle with half the dressing. Arrange in a serving bowl and top with the beef, red onion and chilli. Drizzle the remaining dressing over the beef and garnish with fresh herbs and chopped peanuts.
