Lemongrass Chicken & Cucumber Noodle Salad


  • 2 cups shredded chicken
  • 1 carrot, shredded
  • 1 small telegraph cucumber, cut into thin strips
  • 1 small bunch coriander, torn or roughly chopped
  • 1 red capsicum, finely sliced
  • 1 cup crispy noodles
  • 1/2 teaspoon each black and white sesame seeds
  • 2 tablespoons olive oil
  • 1 lime, juice and zest
  • 1 tablespoon lemongrass paste
  • 1 tablespoon maple syrup
  • 1 tablespoon pickled ginger, finely sliced
Makes 4 noodle boxes

  1. In a large bowl, combine the chicken, vegetables, coriander and noodles then toss together lightly.
  2. Combine the dressing ingredients in a jar and shake well. Season to taste.
  3. Toss the dressing with the salad about 10 minutes before serving. Garnish with the sesame seeds and extra coriander, if desired.
