Ice Cream Cookiewiches

Ingredients

  • COOKIES
  • 250 grams butter, softened
  • 250 grams caster sugar
  • ½ tin condensed milk
  • 2½ cups flour, sifted
  • 2 heaped teaspoons baking powder
  • FOR BAILEYS CHOCOLATE CHIP COOKIEWICH
  • 1 cup milk or dark chocolate chips
  • FOR CRUSHED PISTACHIO & LIMONCELLO COOKIEWICH
  • ⅔ cup ground pistachio nuts
  • finely grated zest of 1 lime
  • FILLINGS & TOPPINGS
  • 950ml good vanilla ice cream
  • FOR BAILEYS CHOCOLATE CHIP COOKIEWICH
  • ½ cup Baileys or O’Mara’s Irish Cream
  • 1 cup melted milk chocolate, for dipping
  • ½ cup chocolate chips, plus freeze-dried strawberry powder, if desired
  • FOR CRUSHED PISTACHIO & LIMONCELLO COOKIEWICH
  • ½ cup limoncello or lemon liqueur
  • ⅔ cup lemon curd
  • 1 cup melted white chocolate, for dipping
  • ½ cup freeze-dried strawberry powder, for sprinkling
These ice cream sandwich “cookiewiches” are delightful. Vanilla ice cream pairs well with all sorts of liqueurs, so get creative! Makes 12-16 large cookies
  1. Cream the butter and sugar until light and fluffy
  2. Add the condensed milk, chocolate chips or pistachio and lime zest, and mix
  3. Gradually stir in the flour and baking powder and mix well to a stiff batter
  4. Heat oven to 155°C fanbake. Line a baking tray with baking paper
  5. Roll dough into balls, place on tray and flatten slightly
  6. Bake for 12-15 minutes. Transfer to a cooling rack. Once cooled, store in an airtight container for up to 2 weeks
  7. Remove vanilla ice cream from freezer to soften
  8. FOR BAILEYS CHOCOLATE CHIP COOKIEWICH: Stir liqueur through the tub of ice cream, replace lid and freeze until firm
  9. FOR CRUSHED PISTACIO & LIMONCELLO COOKIEWICH: In a small bowl, mix limoncello and lemon curd. Stir through the tub of ice cream, replace lid and freeze until firm
  10. TO ASSEMBLE: Sandwich your ice cream of choice between cookies and squeeze lightly. Dip one side of the Cookiewich into melted milk or white chocolate and sprinkle with chocolate chips or strawberry powder. Devour immediately or store in in a baking-paper-lined container in the freezer
