Chocolate-dipped Blue Cheese Stuffed Dates


  • 12 large fresh dates
  • 50g creamy blue cheese (Castello or tangy blue vein)
  • 150g dark chocolate
  • 2 tablespoons flaked almonds, lightly crushed

  1. Gently split the dates open and remove stones. Take a small teaspoonful of the blue cheese, and wedge it inside the date, wrapping the date flesh around the cheese.
  2. Melt the dark chocolate according to packet instructions until just liquid, and dip each date into the chocolate. Lift it out carefully with a fork, allow the excess chocolate to drain off, the arrange on a lined baking tray. Sprinkle with crushed almonds and refrigerate to set.
