Chilli and Whisky Grilled Prawns

Ingredients

  • 500g raw jumbo prawns
  • 3 tablespoons whisky
  • 2 tablespoons caster sugar
  • 2 cloves garlic, crushed
  • 1 red chilli, finely chopped, plus extra slices to garnish (optional)
  • 1 tablespoon olive oil
  • TO SERVE
  • lime wedges
  • coriander leaves
Succulent prawns grilled on the barbie and drenched in a generous splash of smooth whisky is exactly the dish you need this summer
  1. In a large bowl, combine the prawns, whisky, sugar, garlic and chilli. Set aside for 20 minutes.
  2. Preheat the barbecue grill to medium and brush with the olive oil. Grill the prawns for 3 minutes on each side, or until golden. Brush extra marinade over the prawns as they cook.
  3. Serve the prawns with lime wedges, coriander leaves and extra chilli, if desired.
