Caramel Swirl Brownie


  • 1 cup caster sugar
  • 1 cup plain flour
  • 1/2 cup cocoa powder
  • 1/2 cup icing sugar
  • 1/2 cup chopped white or milk chocolate
  • 1/2 cup chopped pecans or walnuts
  • pinch salt
  • 2 eggs
  • 1/2 cup oil (plain or light olive oil)
  • 2 tablespoons water
  • dash of Wild Turkey American Honey Whiskey (if desired)
  • 1/4 cup caramel condensed milk, whisked until smooth

  1. Pre-head oven to 165°C. Line a brownie tin or similar.
  2. In a large bowl, sift in the sugar, flour, cocoa and icing sugar, then stir in the chopped chocolate, pecans and salt. Mix well.
  3. Whisk the eggs, oil, water and whiskey in a separate bowl. Fold the wet ingredients into the dry ingredients until just mixed – it will be really thick and glossy.
  4. Spread out evenly in the prepared tin, then dot the caramel condensed milk over the top. Swirl in slightly with a knife or tooth pick.
  5. Bake for 30-35 minutes or until a skewer comes out with just a few moist crumbs. Allow to cool completely before cutting.
