BBQ Mediterranean Vegetable Salad with Feta and Toasted Seeds

Ingredients

  • ¼ cup sundried tomato oil or olive oil
  • sea salt
  • cracked pepper
  • sprinkle of garlic powder
  • 1 eggplant, sliced into rounds
  • 2 medium zucchinis, sliced on the angle
  • 1 red onion, sliced
  • 1 red plus 1 yellow capsicum, cut into bite-sized pieces
  • a few handfuls baby spinach leaves
  • 40g feta cheese
  • ¼ cup toasted mixed seeds
  • 2-3 tablespoons balsamic dressing (or your favourite)

Serves:6

  1. Combine the oil, salt, pepper and garlic powder.
  2. Brush the vegetables with the oil and grill in batches on both sides until coloured and tender.
  3. Arrange spinach leaves in the centre of a platter, then scatter over the barbecued vegetables.
  4. Garnish with crumbled feta and sprinkle with toasted seeds.
  5. Drizzle over a little dressing just before serving.
