grapefruit for 3 grapefruit ice cubes

1-2 teaspoons grapefruit or orange marmalade

50ml gin

sparkling water
There are two ways to preserve a glut of grapefruit: grapefruit ice cubes and marmalade. Both are used here in this riff on a Tom Collins. Serves 1.

GRAPEFRUIT ICE CUBES: Juice grapefruit, pour juice into ice cube trays and place in the freezer until set.

FOR THE COCKTAIL: Add marmalade, gin and grapefruit ice cubes to a cocktail shaker and shake well. Pour into a tall glass and top up with sparkling water. You can strain off the marmalade bits, if preferred.
