Classic Strawberry Daiquiri

Ingredients

  • 250mls white rum
  • 3 cups fresh NZ strawberries, washed, stems removed
  • 50mls fresh lime juice
  • 2 handfuls ice
  • Fresh strawberries to garnish
Make this delicious icy drink with fresh New Zealand strawberries; it's a fantastic way to use up the slightly mushy ones at the end!

So many strawberries, so little time! This delicious variation on the classic Daiquiri gets its flavour from the natural sugar of ripe strawberries, a hit of citrus - and, of course, a good white rum. This recipe makes 4 drinks; don't try to do any more than that in the blender or you'll be redecorating the kitchen!

 

  1. Chop strawberries roughly into quarters. Add to a blender with rum, ice and lime juice. Holding the lid firmly down, blend until desired thickness is reached. If you want it slushier, just add more ice.
  2. Pour drinks evenly into glasses and garnish with your strawberry. Serve ice cold.
  3. To make the strawberry garnish, wash strawberries (one per glass) with stem still attached. Using a sharp knife, slice evenly through strawberry, ensuring you leave the top whole. Press strawberry lightly on a surface using your hand to fan the fruit.
