CHOCOLATE TEQUILA ROYALE

Ingredients

  • 30ml reposado tequila
  • 10ml mole spice syrup (see method)
  • 15ml fresh lime juice
  • 5ml agave nectar (or honey if unavailable)
  • 75ml champagne
  • star anise, to garnish (optional)
  • 150ml honey
  • 3 dashes chocolate bitters
  • 1/2 teaspoon cumin seeds
  • 3 tablespoons demerara sugar
  • 200ml water
The spicy, sweet and bitter flavours of Mexican mole syrup meet tequila and champagne for a cocktail to remember.
  1. Mole spice syrup: Add all ingredients to a pot and bring to the boil for 5 minutes. Strain any sediment and chill.
  2. Cocktail: Add the reposado tequila, mole spice syrup, lime juice and agave nectar or honey to a champagne flute and top up with champagne. Garnish with a star anise, if using.
