Chocolate Raspberry Martini

Ingredients

  • 60ml Absolut Raspberri vodka
  • 60mls white créme de cacao
  • 1 punnet fresh raspberries (or 200g frozen)
  • 1 cup ice
  • 2 large scoops vanilla ice cream
  • 200g dark baking chocolate
  • Freeze dried raspberries, to serve
Summer loving at its best! This gorgeous cocktail makes a fun dessert option, or afternoon treat. Not for the calorie conscious, but very yum! Serves 2

  1. Freeze glasses for at least 30 minutes prior to serving. Create chocolate rim by melting baking chocolate according to packet instructions. Invert glasses, and dip into melted chocolate. Brush on a little more chocolate with a clean pastry brush if desired, then return upright glasses to freezer for at least an hour, or until ready to serve.
  2. Place vodka, white créme de cacao, raspberries, ice and ice cream in a blender and process until smooth. Pour mixture into frozen glasses, garnish with fresh or freeze-dried raspberries and serve.
  3. TOP TIP: Try this drink with other red berries - strawberries and boysenberries are yum options!
